Tina Archuleta’s story as a food entrepreneur began in 2012, at a farmers market in Jemez Pueblo where she is from. While selling produce, she recognized that access to fresh vegetables was only part of the challenge. People also needed practical support and inspiration to prepare and enjoy them.

Tina responded by preparing simple vegetarian plates and burritos for tribal community members and teaching cooking classes in her community. From 2012 through 2016, she continued sharing food and knowledge, including through local catering.

The loss of her mother to cancer in 2016 deeply affected Tina. By 2018, her determination to help her community access healthier food had become an urgent personal mission. She approached a local gas station on the reservation and pitched an idea: selling her freshly prepared food in its refrigerated display case. The gas station agreed. That first business pitch became a turning point.

Tina joined a Native entrepreneur in residence program, strengthened her business skills, continued catering, developed relationships, and expanded through pop-ups and other opportunities. She kept building on the work she had started years earlier, turning a grassroots community food initiative into a growing enterprise.

In 2022, that journey led to the opening of Itality in Albuquerque, bringing plant-based Pueblo-inspired cuisine into a dedicated restaurant space.

Today, Tina's work extends beyond serving meals. Through cooking classes, community education, recipe sharing, and entrepreneurship, she seeks to help people develop practical food skills and build healthier relationships with what they eat. Hundreds of people have participated in her cooking education over the years.

Itality represents the continuation of a commitment that began at a farmers market in 2012: listening to her community, responding with practical solutions, and building something that can serve people for generations. Tina’s journey demonstrates how culinary entrepreneurship can grow from a local need into a platform for Indigenous food traditions, education, and community empowerment.
